Three Cuts celebrates the artistry of simplicity with its focus on three signature steaks: Striploin, Tenderloin and Ribeye, each seared over a three-metre oak-wood fire.
After dinner, slip behind the scenes to Three Sips, the restaurant’s hidden speakeasy with a retro disco flair. The space channels art deco elegance with bold block colours and plush sofas, while the soundtrack blends an eclectic mix of Soul, Bossa Nova, French Pop, Italo Disco, Nu Tropical, and Nu Disco - creating a vibrant, seamless soundscape that carries the mood from day to night.
The restaurant now houses a permanent installation of artworks by internationally renowned fine artist Christopher Cuseo, transforming the space into a living gallery of movement, texture and emotion.

Cuseo’s large-scale canvases blend bold colour, intricate pattern and fluid form. Their energy reflects the restaurant’s ethos of lazy elegance, a relaxed sophistication underscored by the drama of the open-fire kitchen and the warm glow of its stained-glass bar. The result is an immersive sensory landscape where art, design and cuisine exist in seamless dialogue.
“From the outset, our vision for Three Cuts was to craft a holistic experience, one that engages every sense”, explains Jason Bassili, CEO of the Bassili-Co Group. “Christopher Cuseo’s art was central to that vision. His work mirrors the energy and sophistication we pursue in our cuisine. It is a dialogue between the raw, elemental power of fire-grilled steak and the graceful, weightless motion captured in his paintings. His art is not an addition; it is part of our identity”.
Cuseo’s art transcends conventional boundaries, blending abstract expressionism with sculptural precision, a language of gesture and texture that finds a natural home within Three Cuts’ modern yet timeless design.
“It has been incredible to see my work become a living part of the Three Cuts experience”, says Cuseo. The restaurant offers a powerful context. The play of light through the double-height ceilings, the textures of the interior and the convivial atmosphere all contribute to a dynamic backdrop. The draped fabrics in my paintings evoke fluid elegance and motion, themes that resonate with the energy of Dubai and the refined spirit of Three Cuts.
